What else did you have with it?

I haven't had good catfish since my father died. He did epic catfish, too. =D

*tummy growls*

If you come over this way sometime you have to try out this joint we've got called Red's Ribs... their motto is "Tender As A Mother's Love" :-D Their ribs are soooo good, and they also make a killer brisket sandwich.

You can also get a turkey leg for four bucks and pretend to be Henry VIII.

Well, I'm sure you've cooked by now, but last night I fried it in Zatarain's, and tonight I blackened some. Nothing particularly special in terms of preparation, but I frickin' nailed the cooking like I never have before. :)

Just hush puppies, and that was plenty. :)

I swear, ma'am, you are out of place anywhere but the South. I claim you in the name of all that's Redneck. =)

OK, but you gotta embrace the cornmeal.

GODDAMMIT I LOVE SOUTHERN FOOD. OK, so I can't get apizza or Indian or Thai like I could in New Haven, but it's more than worth the tradeoff, by god.

Does it have to be 100% cornmeal?

I did finally try to fry some okra using some cornmeal and it was really good, but I diluted the cornmeal with other things.

I don't know anything about cooking catfish, so I'm all yours including cornmeal. Isn't that out most catfish houses prepare it?

Me, too, she needs to plunge into the Deep South.

Particularly now that she's having a girl baby, she needs to be reared up in the ways of proper behavior and cooking, and the making of sweet tea.

Yes, Lord. There's also a place here that has excellent etoufee and shrimp salad (though my stepmama's shrimp salad is the best anywhere, and her bread pudding with rum sauce made with French bread... oh, and her homemade eggnog). There's a place called "Almost Home" around the corner that has buffet style food of all the best kinds and all-you-can-eat fried catfish on Fridays.

Like you say, I do miss the variety of pizzas, calzones and subs up North, and some of the seafood (Mani is a big lobster and steamers man) but for myself, nothing beats Down Home Southern Cooking. Shreveport isn't too far away for decent Chinese and sushi if we really want it. I haven't looked for Thai yet, but we were just discussing how I miss it (though we've grilled killer chicken satay).
